Salted cod, stewed vegetables and marjoram

  • INGREDIENTS

    • 400 g Monti salted cod hearts
    • 1 carrot
    • 1 celery stalk
    • 4 small potatoes
    • 2 shallots
    • Fresh chilli pepper
    • 200 g tomato purée
    • 80 g water
    • Salt
    • Olive oil
    • Parsley stems

  • PREPARATION

    • Clean the vegetables, divide the carrot and celery into 4 large pieces, while leaving the shallots and potatoes whole.
    • Cover the bottom of a small pan with oil, add the vegetables, parsley stems and chilli pepper and sauté.
    • Add the tomato, water and leave to cook.
    • When the potatoes are almost cooked, add the cod and cook for 15 to 20 minutes. Season with marjoram sprigs and adjust to taste.
