Spaghetti with salted cod, garlic and wild fennel porchetta

  • INGREDIENTS

    • 400 g Monti salted cod fillet
    • 1 clove of garlic
    • Olive oil
    • Wild fennel
    • 400 g spaghetti

  • PREPARATION

    • Remove the core from the garlic and chop it finely together with the wild fennel.
    • Coat the bottom of a frying pan with oil and gently fry the chopped mixture.
    • After removing the skin from the cod, cut it into small pieces and add it to the pan.
    • Allow it to steam and simmer, keeping the pan covered.
    • Cook the spaghetti in plenty of salted water, drain and mix with the prepared sauce. If necessary, add a little cooking water.
