Steamed salted cod in a green sauce of aromatic herbs.

INGREDIENTS FOR THE GREEN SAUCE
- 125 g parsley leaves
- 50 g pickled gherkins
- 25 g pickled spring onions
- 2 g desalinated capers
- 2 g anchovies in oil
- 1 g garlic, peeled and skinned
- 5 g mint
- 10 g red wine vinegar
- 200 g olive oil
- salt and pepper
INGREDIENTS
- 400 g Monti salted cod hearts
PREPARATION OF THE GREEN SAUCE
- Pour all the fine ingredients into a blender and blend intermittently without letting the ingredients get too hot.
- Season to taste and store.
PREPARATION OF THE SALTED COD
- Portion the salted cod and steam it for 15/20 min.
