Steamed salted cod

Steamed salted cod in a green sauce of aromatic herbs.

 


  • SERVINGS FOR: 2 People


  • INGREDIENTS FOR THE GREEN SAUCE

    • 125 g parsley leaves
    • 50 g pickled gherkins
    • 25 g pickled spring onions
    • 2 g desalinated capers
    • 2 g anchovies in oil
    • 1 g garlic, peeled and skinned
    • 5 g mint
    • 10 g red wine vinegar
    • 200 g olive oil
    • salt and pepper


    INGREDIENTS

    • 400 g Monti salted cod hearts

  • PREPARATION OF THE GREEN SAUCE

    • Pour all the fine ingredients into a blender and blend intermittently without letting the ingredients get too hot.
    • Season to taste and store.


    PREPARATION OF THE SALTED COD

    • Portion the salted cod and steam it for 15/20 min.
