The World's First Salted Cod Supply Chain is Made in Italy

The salted cod supply chain is the path our beloved fish takes, from the moment of its capture in the sea to your table.

At every stage of this journey, we constantly work to ensure safety, the highest quality and, most importantly, sustainability.

Since 2015, thanks to the perseverance of Monti's players and Jangaard's entrepreneurial initiative, this Italian-Norwegian pairing has officially become the world's first certified salted cod supply chain, and what's more, Made in Italy!

Complete Control of the Supply Chain

One of the distinctive features of our supply chain is complete control.

We directly guarantee all the transformation phases in our plants, from the processing of the whole fish to the packaging of the finished products.

This approach offers us the maximum freshness and the highest quality of our cod.

'Not being able to control the process from the origin of the product has always created a natural unease for us; therefore, in 2015 we entered into a historic partnership with Norway's largest cod producer, Jangaard Export. Today we have total control of the supply chain'.

Careful Selection of Suppliers

The choice of suppliers is a fundamental part of our supply chain.

We have established strict evaluation procedures for all our external collaborators, ensuring that they meet our high-quality standards.

60% of all the raw materials come from our trusted partner in Norway and the remainder from selected suppliers in Denmark, the Faroe Islands, Iceland and Portugal.

 
 
 
 

From Fishing to Packaging: a Guarantee of Quality

Our supply chain starts with fishing. We work closely with our suppliers to ensure that fishing is sustainable and environmentally friendly.

This is why our products are obtained exclusively from line fishing and the processing of two types of cod: Gadus Morhua and Gadus Macrocephalus.

The next step is equally crucial: the freshly landed fish is masterfully prepared for the salting and curing process.

This magical step transforms the catch into our delicious, salted cod, all following strict quality and hygiene standards.

Once ready, the salted cod is carefully packaged to preserve its freshness and distinctive flavour. This step ensures that the product retains its deliciousness until the moment you taste it.

Specifically, we have 8 steps to comply with in order to guarantee control of our supply chain:

  • STEP 1: Cod fishing takes place between December and February;
  • STEP 2: The cod is cleaned on specially designed boats;
  • STEP 3: The cod undergoes the salting and curing process and then becomes salted cod;
  • STEP 4: The salted cod is packaged in boxes and shipped to our plant via intermodal transport;
  • STEP 5: The salted cod is separated from the salt, portioned and soaked in temperature-controlled water tanks;
  • STEP 6: The salted cod is packaged;
  • STEP 7: Transfer to the HPP plant;
  • STEP 8: Sales and distribution in the various channels.
