Salted cod au gratin, sultanas, walnuts, wilted coloured tomatoes and parsley

  • INGREDIENTS

    • 400 g Monti salted cod hearts
    • 40 g sultanas
    • 20 g shelled walnuts
    • 50 g red cherry tomatoes
    • 50 g yellow cherry tomatoes
    • Olive oil
    • Parsley
    • Breadcrumbs
    • Salt

  • PREPARATION

    • Cut the salted cod into uniform portions.
    • Arrange the salted cod portions in an oven dish, together with the other ingredients.
    • Add the halved cherry tomatoes, already seasoned with a pinch of salt and a drizzle of oil.
    • Before baking, sprinkle chopped parsley and breadcrumbs on top.
    • Bake in a preheated oven at 160°C for 20-25 minutes.
